This is our family’s tomato sauce, passed down through generations, originating from the hills of Monteleone di Puglia. Each year we’ve come together to make a large batch to share with family and friends. Just quality ingredients, time, and care. We haven’t changed much since.

Quality matters.

The sauce is boss, but every ingredient is important. Fresh, high-quality ingredients make a noticeable difference in cooking. So pick your pasta wisley. While quality costs more, it is worth the price. A great example is bronze-cut pasta made from durum wheat semolina in Italy. Unlike smooth, industrial pasta, bronze-cut pasta is extruded through bronze dies, giving it a slightly rough surface. This texture helps sauces cling to the pasta rather than sliding off, creating a more balanced and satisfying dish. Because it is less slippery, each bite holds the sauce and flavors together. Using quality ingredients like this elevates everyday meals into something more authentic and delicious. If the pasta is not bronze cut stick with a pasta variety that has ridges or a shape that will hold the sauce.

Canadian vs Italian Pasta

Canadian durum wheat semolina pasta is made from high-protein wheat, often featuring a firmer texture due to high gluten content. Italian durum wheat semolina pasta emphasizes traditional, often slower production methods with high quality durum. This results in better starch retention, authentic texture, and in some cases, easier digestion.

Say Cheese.

The best cheese topping is Parmigiano Reggiano which is only made in a certain region of Italy and all ingredients are tightly controlled. Despite being a dairy product, aged Parmesan is naturally lactose-free. Some, but not all, lower-cost, store-bought, pre-grated "Parmesan" products in the US and Canada may contain cellulose (a wood pulp anti-caking agent) or other preservatives. Another alternative is Percorino Crotonese which is often cheaper than Parmigiano Reggiano.

Parmigiano Reggiano and Crotonese are both iconic Italian cheeses, but they differ primarily in milk source, region, and texture. Parmigiano Reggiano is a nutty, granular, aged cow’s milk cheese from Northern Italy. Pecorino Crotonese is a savory, oily, firm, or semi-hard sheep’s milk cheese from Calabria. Both are great options for your dishes!
